We roast this in an espresso style and unlock wonderful chocolate and vanilla flavors that come through both in a presspot or pulled as an espresso shot.

Trapachitos is produced by the 80 families that comprise this Ixil A'Achimbal collective in Guatemala. Grown at 4,600 feet, this fully washed coffee is comprised of bourbon and typica varietals is meticulously hand sorted and processed and yields a cup that is characterized by subltle hints of vanilla, peach and caramel with a pleasant acidity that is not overpowering. The final result is a finish that is rich and lingers pleasantly.

Each year Costa Rica makes wonderful strides in producing great specialty micro-lot coffees that stand out from the rest of the coffee coming from the region. This year we cupped a number of these micro-lots and the coffee from Ricardo Perez's farm stood out from the rest. Helsar de Zarcero come from the west valley region known as Llano Bonito de Naranjo and offers up a beautifully sweet balanced cup with notes of candied orange and caramel.

Fazenda Sertaozinho produces some of Brazil's finest specialty coffees. Placing 4th in 2008 and 14th in the 2009 Cup of Excellence competition, this Fazenda consistently produces beautifully prepared yellow bourbon coffee that is perfect for espresso. We roast it gently and slowly to ensure maximum development of sugars and caramels yielding a thick, sweet chocolate espresso with lovely notes of vanilla and marzipan.

This wonderful relationship coffee comes to us through Atlas importers. Comprised of 42 members, this small holder producer group has produced a beautiful example of what a high quality washed Huila coffee should taste like.
Each of the 42 member has their own de-pulping and fermentation set up, along with raised drying screens protected from the rain by parabolic roofs of transparent plastic. The drying areas are set up on a slight incline, so that both ends of the tunnel can be opened to allow airflow across the coffee. Since every family contributes coffee for export, each fermentation and drying process has to be done perfectly, or it could compromise the entire shipment. Happily, the whole community takes great pride in their work, and the results show very nicely in the cup--delicate floral tones balanced by jellied wine grape sweetness and black cherry acidity.
