We are excited to enter our second year offering coffee from Mexico at Plowshares! We have been watching the specialty coffee movement evolve in Mexico over the past few years and we have decided now is the time to deepen our relationships in Mexico and share these exciting coffees with our customers.
This year we our excited to offer coffee from Chiapas. Cafe Capitan is a relatively new cooperative that broke off from a larger umbrella organization with the intention of pursuing higher quality which in turn returns higher premiums to farmers. The cooperative works with farmers in the surrounding pueblos of Comunidad Monterey, Santerita, Laguna del Cofre, Capitan and Las Pilas.
The specialty market in Chiapas is evolving as producers, already rooted in a strong culture of cooperativism and organic production, begin planting new varieties as well as making efforts to combine environmentally sound and profitable coffee production practices with the protection of important biosphere reserves in the area..
